Yorkshire Forced Rhubarb π±
West Hall Farm is a family-run business that has been growing Yorkshire Forced Rhubarb for five generations. They are based near Wakefield, Yorkshire - in the famous Rhubarb Triangle.
Yorkshire is renowned for its Forced Rhubarb, with a tradition of growing the plants in large, dark wooden sheds that dates back to the 1870s. This technique was honed in the late Victorian years when proximity to collieries for cheap coal (to heat the sheds) and mills for wool shoddy (to fertilise the soil) were advantages.
Forced Rhubarb has a sweet, delicate flavour and a vibrant pink colour. It's sweeter than Rhubarb harvested in the summer because the forcing process stores glucose in the stalks instead of using it to grow the leaves.
The Cooks family grow several varieties to spread and prolong the season, this year they will be supplying us with their Stockbridge Harbinger and Arrow Rhubarb.
