Finò Il Finocchio Italiano Fennel 💚

Finò Il Finocchio Italiano was established in 2003 by Vittorio Caligari and Marco Babbi. Based in Savignano sul Rubicone, a comune in the Province of Forlì-Cesena, Emilia-Romagna, they began supplying local fruit and Fennel - typically a winter vegetable in the warmer months. Within three years, the company decided to not deal with fruit anymore, but to specialise in the processing and distribution of Fennel only. Today, Finò is the only exclusive supplier of 100% Italian Fennel, distributed according to the season.

Fennel - Growing

GROWING

Finò grow their Fennel for 120-150 days during winter. The first step in the process of growing Fennel, is the seeding which takes 60 days and starts in January.

Soil: Fennel prefers moist, well-drained soil and it grows best in a lot of sun with temperatures between 15–24°C.

Mulching: Straw or lawn clippings can help maintain cool, moist soil and prevent weeds.

Staking: Fennel plants have tall floral stalks that can fall over, so they are staked.

Fennel - Harvesting

HARVESTING

Harvesting starts in February where the Fennel bulbs are typically dug out manually or with machinery after about 90–100 days.

The Fennel flowers are cut with knives and then sorted and cleaned using mechanised equipment. The seed heads are collected when they turn brown.

PROCESSING

Every phase of the supply chain is strictly monitored and analysed until the final result: the amount of residue on the product is 30% less than the legal limit level in Italy.

After cutting, the Fennel is washed to remove soil and impurities. They are sorted by size, weight and quality. Through automatic calibration, the Fennel is packaged into wooden crates.
